Preparation

1. Prepare the Vegetables

Wash and chop the potatoes, spinach, cauliflower, onion, and green chilies. Keep them aside.

2. Make the Batter

In a large bowl, mix chickpea flour, rice flour, turmeric powder, cumin powder, and salt. Gradually add water to create a thick batter.

Frying

3. Heat Oil

In a deep frying pan, heat oil over medium heat.

4. Coat and Fry

Dip the prepared vegetables into the batter, making sure they are well-coated. Carefully drop them into the hot oil and fry until golden brown. Remove and drain on paper towels.

Making the Sauce

5. Prepare Tamarind Sauce

In a saucepan, combine tamarind paste, sugar, and salt. Heat over low flame, stirring until the sugar dissolves. Adjust seasoning as necessary.

Serving

6. Serve Hot

Serve the hot pakoras with tamarind sauce and mint chutney on the side.
