1. Prepare the Marinade
In a large bowl, combine the yogurt, ginger, garlic, salt, and pureed tomatoes. Add the lamb cubes and mix well. Cover and marinate for at least 2 hours, preferably overnight in the refrigerator.
2. Sauté the Onions
In a large pot or Dutch oven, heat the vegetable oil or ghee over medium heat. Add the finely chopped onions and sauté until they are golden brown.
3. Cook the Lamb
Add the marinated lamb along with the marinade to the pot. Stir well to combine with the onions. Cook on medium-high heat until the lamb is browned, about 5-7 minutes.
4. Simmer the Curry
Reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the lamb is tender. Stir occasionally and add water if necessary to prevent sticking.
5. Finish and Serve
Once the lamb is tender, taste and adjust the seasoning with salt. Serve hot with steamed rice or naan.
