Method

For the Kerala Jackfruit Fry

  1. 1

    Prepare the Jackfruit

In a large pot, boil the chopped raw jackfruit in water with a pinch of salt until tender, about 15-20 minutes. Drain and set aside.

  2. 2

    Stir-fry the Jackfruit

In a large pan, heat coconut oil over medium heat. Add mustard seeds and let them pop. Add dried red chilies and curry leaves, and sauté for a minute until fragrant.

  3. 3

    Add Spices

Stir in the boiled jackfruit, turmeric powder, salt, and black pepper powder. Fry for about 10-15 minutes, stirring occasionally, until the jackfruit is slightly crispy and well coated with the spices.

For the Carrot and Clove Chutney

  1. 4

    Cook the Ingredients

In a saucepan, heat a little oil and sauté the chopped onions and minced garlic until soft. Add grated carrots, cloves, and green chilies, and cook for another 5 minutes.

  2. 5

    Blend the Chutney

Transfer the mixture to a blender, add grated coconut, salt, and lemon juice. Blend until smooth, adjusting the consistency with a little water if necessary.
