For the Kerala Jackfruit Fry

Prepare the Jackfruit
In a large pot, boil the chopped raw jackfruit in water with a pinch of salt until tender, about 15-20 minutes. Drain and set aside.

Stir-fry the Jackfruit
In a large pan, heat coconut oil over medium heat. Add mustard seeds and let them pop. Add dried red chilies and curry leaves, and sauté for a minute until fragrant.

Add Spices
Stir in the boiled jackfruit, turmeric powder, salt, and black pepper powder. Fry for about 10-15 minutes, stirring occasionally, until the jackfruit is slightly crispy and well coated with the spices.

Blend the Chutney
Transfer the mixture to a blender, add grated coconut, salt, and lemon juice. Blend until smooth, adjusting the consistency with a little water if necessary.
