    Prepare the Ingredients

    Start by peeling and chopping the jackfruit into bite-sized pieces. Roast the cashews in a pan until golden brown and set aside.

    Sauté the Base

    In a large pot, heat the oil over medium heat. Add the mustard seeds and cumin seeds, allowing them to crackle. Then, add the chopped onions and sauté until they turn translucent.

    Add Spices

    Stir in the ginger-garlic paste, curry leaves, turmeric powder, red chili powder, and coriander powder. Cook for 2-3 minutes until fragrant.

    Incorporate Jackfruit

    Add the chopped jackfruit to the pot and mix well. Cook for about 5 minutes, allowing the jackfruit to absorb the flavors.

    Add Tomato Puree

    Pour in the tomato puree and simmer for another 5 minutes, stirring occasionally.

    Add Cashews and Coconut Milk

    Stir in the roasted cashews and coconut milk. Add salt to taste. Allow the curry to simmer for 15-20 minutes on low heat until the jackfruit is tender.
