Prepare the Chicken
Preheat your smoker to 225°F (107°C). Rinse the chicken under cold water and pat dry with paper towels. Rub the olive oil all over the chicken, then season with smoked paprika, garlic powder, onion powder, salt, and black pepper.
Smoke the Chicken
Place the seasoned chicken in the smoker breast side up and smoke for about 4-5 hours, or until the internal temperature reaches 165°F (74°C).
Prepare the Sides
While the chicken is smoking, prepare the sides. For the corn on the cob, boil or grill until tender. For the coleslaw, combine coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and pepper in a large bowl and toss until well coated.
Serve
Once the chicken is done, let it rest for 10-15 minutes before carving. Serve the smoked chicken with corn on the cob and coleslaw on the side.
