Prepare Sweet Potatoes
Preheat your oven to 400°F (200°C). Peel and chop sweet potatoes into cubes and toss with olive oil, salt, and pepper. Roast for about 25-30 minutes or until tender.

Mash and Combine Ingredients
Once the sweet potatoes are roasted, let them cool slightly. In a large bowl, mash the sweet potatoes. Add black beans, oats, cumin, garlic powder, and adjust salt and pepper to taste. Mix until well combined.

Form Patties
Divide the mixture into 4 equal portions and form into patties. If the mixture is too wet, add more oats to help bind.

Assemble the Burger
Toast the brioche buns if desired. Spread chipotle aioli on the bottom half of the bun, place the cooked sweet potato patty, add cheddar cheese, spinach, tomato slices, and pickles. Top with the other half of the bun.
