1. Prepare the Cashew Cheese Sauce
Soak the cashew nuts in water for at least 2 hours, then drain. In a blender, combine soaked cashews, nutritional yeast, lemon juice, water, garlic powder, onion powder, and salt. Blend until smooth and creamy.
2. Cook the Pasta
In a large pot, bring water to a boil and add the pasta shells. Cook according to package instructions until al dente. Drain and set aside.
3. Cook the Tempeh Bacon
In a skillet over medium heat, cook the tempeh bacon until crispy, about 5-7 minutes. Remove from heat.
4. Combine Ingredients
In a large mixing bowl, combine the cooked pasta shells, cashew cheese sauce, crispy tempeh bacon, BBQ sauce, and sliced jalapeños. Mix well until everything is coated.
5. Bake the Mac N Cheese
Preheat the oven to 350°F (175°C). Transfer the mixture to a baking dish. Top with French fried onions. Bake for 20 minutes until heated through and the top is golden.
