Crispy TiNDLE "Chicken" Patties
Prep TiNDLE
If patties are frozen, thaw in refrigerator or at room temperature until flexible but still cold (about 20–30 minutes). Pat dry with paper towel to remove surface moisture.
Make batter
In a medium bowl whisk together all-purpose flour, cornstarch, garlic powder, onion powder, smoked paprika, ground black pepper, and salt. Add aquafaba (or plant milk) and cold sparkling water and whisk until a smooth, slightly thick batter forms. Batter should coat the back of a spoon but still be pourable. Adjust with an extra tablespoon of water if too thick.
Heat oil
Pour neutral oil into a deep, heavy skillet or Dutch oven to a depth of about 1.5 inches (3–4 cm). Heat over medium-high until oil reaches 175–180°C (350–360°F) — or test by dropping a small dollop of batter; it should sizzle and rise immediately.
Batter and fry
Working one at a time, hold a TiNDLE patty by an edge and dip into the batter to fully coat (allow excess to drip back into bowl). Carefully lower the battered patty into hot oil. Fry 2 patties at a time without crowding, maintaining oil temperature. Fry for 3–4 minutes per side until deep golden brown and crisp, flipping gently with tongs. Total frying time should be 6–8 minutes depending on thickness. If using a thermometer, aim for oil to stay near 170–180°C.
Drain and season
Remove patties to a wire rack set over a baking sheet or to paper towels to drain. Immediately sprinkle a light pinch of salt over each patty while hot. Keep warm in a low oven (90–100°C) if preparing ahead while finishing sandwiches.

Prepare condiments
If desired, mix vegan mayonnaise with lemon juice and hot sauce to taste for a tangy-spicy spread. Taste and adjust seasoning.
Assemble sandwiches
Spread about 1 tablespoon of mayo mixture on the bottom bun and 1 tablespoon on the top bun. On the bottom bun add two lettuce leaves, then place the hot crispy TiNDLE patty on top. Layer 3 pickle chips over the patty and add 2–3 tomato slices. Add remaining lettuce if desired, then crown with the top bun.
Serve
Serve immediately while patties are hot and crispy, with extra pickle chips or fries on the side. Provide extra vegan mayo or hot sauce to taste.
