Prepare the Dough
In a mixing bowl, combine warm water, brown sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy. Gradually add flour and salt, mixing until a dough forms.

Shape the Pretzel Bites
After the dough has risen, punch it down and divide it into small pieces (about 1-inch each). Roll each piece into a ball.

Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water to a boil and add the baking soda. Carefully add the pretzel bites to the boiling water for about 30 seconds, then remove with a slotted spoon and place on a baking sheet lined with parchment paper.

Fry the Pretzel Bites
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the pretzel bites in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

While still hot, sprinkle the pretzel bites with coarse sea salt. Serve warm with your choice of house agave mustard, house cashew nacho cheese, or house horseradish aioli dip.
