Prepare the Vegetables
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped bell peppers and onions, season with salt and pepper, and sauté until softened, about 5-7 minutes.

Grill the Seitan
In the same skillet, add the remaining tablespoon of olive oil and add the seitan. Sauté for about 5 minutes until it starts to brown. Mix in the buffalo wing sauce and cook for another 2-3 minutes until heated through.

Assemble the Cheesesteak
Slice the sub rolls open and layer the grilled seitan mixed with buffalo sauce, followed by the sautéed peppers and onions. Top with cheddar cheese and banana peppers.

Melt the Cheese
Optionally, place the assembled cheesesteaks in a preheated oven at 350°F (175°C) for about 5 minutes to melt the cheese.
