    Marinate the Chicken

    In a large bowl, combine the minced garlic, grated ginger, soy sauce, fish sauce, brown sugar, lime juice, and vegetable oil. Mix well. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

    Cook the Chicken

    Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off. Grill or pan-fry the chicken for about 6-7 minutes on each side, or until cooked through and nicely charred. If using a grill, you can baste the chicken with leftover marinade for extra flavor.
