Preparation of Beans and Rice

    Prepare Pinto Beans

    Soak the pinto beans overnight. Drain and rinse. Cook in a pot with fresh water until tender, about 1-2 hours. Season with salt to taste.

    Rinse sticky rice under cold water until water runs clear. Soak for 4 hours, then steam or cook according to package instructions until tender.

Cooking Spicy Hominy

    Prepare Spicy Hominy

    Heat olive oil in a skillet over medium heat. Add hominy and cayenne pepper. Cook until heated through and slightly crispy, about 5-7 minutes.

Assembly

    Assemble the Bowl

    In a bowl, layer sticky rice at the bottom, followed by pinto beans, spicy hominy, diced tomato, shredded cheddar, sliced avocado, pickled onion, pickled jalapenos, salsa, sliced black olives, and a dollop of sour cream. Top with mixed greens.
