Gobi 65 Ingredients

Method

Preparation Steps

1

Prepare the Cauliflower

Cut the cauliflower into medium-sized florets and set aside.

2

Make the Batter

In a large bowl, mix rice flour, cornstarch, garam masala, turmeric powder, red chili powder, salt, ginger-garlic paste, lemon juice, and water to form a smooth batter.

3

Coat the Cauliflower

Dip each cauliflower floret into the batter, ensuring they are well coated.

4

Fry the Cauliflower

Heat oil in a deep frying pan over medium heat. Fry the coated cauliflower florets in batches until golden brown and crispy. Remove and drain on paper towels.

5

Make the Tamarind Glaze

In a small saucepan, combine tamarind paste, brown sugar, and a splash of water. Heat over low flame until the sugar dissolves and the sauce thickens slightly.

6

Prepare the Garlic Yogurt Sauce

In a bowl, mix yogurt, minced garlic, and salt. Adjust seasoning to taste.

7

Assemble the Dish

Toss the fried cauliflower with the tamarind glaze until well coated. Serve hot with garlic yogurt sauce on the side, garnished with cilantro.
