Prepare the Beans
Rinse the dried pinto beans under cold water to remove any debris. Check for any small stones and discard them.

Soak the Beans
Place the rinsed beans in a large pot and add 4 cups of water. Let the beans soak for at least 6 hours or overnight for best results.

Cook the Beans
After soaking, drain and rinse the beans again. Return the beans to the pot, add fresh water to cover the beans by about 2 inches, and bring to a boil.

Flavor the Beans
Once boiling, reduce the heat to a simmer. Add chopped onion, minced garlic, cumin, chili powder, salt, and pepper. Stir to combine.

Simmer
Cover the pot and let the beans simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more water if needed.
