    Prepare the Corn

    Rinse the dried corn under cold water to remove any debris. Place the corn in a large pot and cover it with water.

    Nixtamalization

    In the pot with the corn, add the lime. Bring the water to a boil over medium-high heat, then reduce the heat and let it simmer for about 30 minutes, stirring occasionally.

    Soak the Corn

    After simmering, turn off the heat and let the corn sit in the lime water for 8-12 hours (or overnight) to allow it to soak and soften.

    Rinse and Remove Skins

    After soaking, drain the corn and rinse it thoroughly under cold water. Use your hands to rub the corn and remove any loose skins.

    Cook the Hominy

    Fill a pot with fresh water, add the rinsed corn, and bring to a boil. Reduce heat and simmer for about 1-2 hours, or until the hominy is tender. Add salt to taste.
