Prepare the Potatoes

Peel and cut the Russet potatoes into thin fry shapes. Soak them in cold water for at least 30 minutes to remove excess starch.

Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes

Drain the soaked potatoes and pat them dry with a paper towel. Carefully add them to the hot oil in batches, frying for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.

Season the Fries

While the fries are still hot, sprinkle them with the Asian chili spice blend and toss to coat evenly.
