Prepare the Hominy

Soak the dried hominy in water overnight. Drain and rinse before cooking.

Cook the Base

In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Add chopped tomatoes to the pot and cook for about 5-7 minutes until they soften and start to break down.

Combine Ingredients

Pour in the vegetable broth and add the soaked hominy. Bring to a boil, then reduce heat to a simmer. Cook for 45-60 minutes until the hominy is tender.

Stir in chopped cilantro, scallions, salt, and black pepper to taste. Simmer for an additional 10 minutes.

Ladle the pozolé into bowls and top with pickled jalapeños and crumbled goat cheese before serving.
