Preparation and Cooking

    Prepare the Chimichurri

    In a food processor, combine parsley, garlic, red wine vinegar, olive oil, and red pepper flakes. Blend until smooth and set aside.

    Prepare the Fries

    Cut the potatoes into thin strips. Soak in cold water for 30 minutes, then drain and pat dry. Heat oil in a deep fryer or large pot to 350°F (175°C) and fry the potatoes until golden brown. Season with salt and set aside.

    Roast the Bone Marrow

    Preheat the oven to 450°F (230°C). Place the bone marrow pieces on a baking tray and roast for about 15-20 minutes until the marrow is soft and bubbly.

    Cook the Steak

    Season the skirt steak with salt and black pepper. Heat a skillet or grill over high heat and add olive oil. Cook the steak for about 3-4 minutes on each side for medium-rare. Allow it to rest before slicing.

    Serve

    Slice the steak against the grain. Serve with crispy fries, roasted bone marrow, and chimichurri sauce on the side.
