    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add grits and salt, reduce heat to low, and cook for about 20-25 minutes, stirring occasionally until thick. Stir in cheddar cheese and butter before serving.

    Cook the Bacon

    In a large skillet over medium heat, add the bacon. Cook until crispy, about 5-7 minutes. Remove bacon and set aside, leaving the rendered fat in the skillet.

    Cook the Brussels Sprouts

    In the same skillet with bacon fat, add halved Brussels sprouts. Season with salt and pepper. Sauté for 8-10 minutes until tender and caramelized. Stir in crumbled bacon before serving.

    Cook the Pork Chops

    Season the pork chops with salt and pepper. In a separate skillet, heat olive oil over medium-high heat. Sear the pork chops for 5-6 minutes on each side or until they reach an internal temperature of 145°F (63°C). Remove from heat and let rest for a few minutes.

    Finish with Pork Jus

    In the same skillet used for the pork, add the pork stock or jus. Bring to a simmer and scrape up any browned bits from the pan. Reduce slightly, then serve over the pork chops.
