    Prepare the Fries

    Peel and cut the potatoes into thin strips. Rinse them in cold water and soak for 30 minutes to remove excess starch. Drain and pat dry.

    Make the Lemon Aioli

    In a bowl, mix mayonnaise, minced garlic, and the juice of half the lemon. Season with salt and pepper to taste. Set aside.

    Prepare the Breading

    In a shallow dish, combine cornmeal, flour, Old Bay seasoning, salt, and pepper. In another bowl, whisk together the egg and milk.

    Coat the Fish

    Dip each pollock fillet first in the egg mixture, then coat with the cornmeal mixture, pressing gently to adhere.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the soaked and dried potato strips in batches and fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels, then season with Old Bay seasoning.

    Fry the Fish

    In the same oil, fry the breaded pollock fillets for about 3-4 minutes on each side or until golden brown and cooked through. Drain on paper towels.

    Serve

    Serve the fried fish with Old Bay fries and a side of lemon aioli. Garnish with lemon wedges.
