Fried Calamari Preparation

Prepare the Aioli
In a bowl, combine the mayonnaise, lemon juice, minced garlic, and a pinch of salt. Mix well and refrigerate until ready to serve.

Prepare the Balsamic Shallots
In a saucepan over medium heat, combine chopped shallots and balsamic vinegar. Cook until shallots are soft and the mixture is slightly thickened, about 5 minutes. Set aside.

Prepare the Calamari
In a bowl, mix flour, cornstarch, salt, black pepper, and cayenne pepper. Dredge the calamari rings in the flour mixture, shaking off any excess.

Fry the Calamari
In a large pot, heat vegetable oil to 350°F (175°C). Fry the calamari in batches until golden brown, about 2-3 minutes per batch. Remove and drain on paper towels.

Serve
Plate the fried calamari, top with sliced cherry peppers, and drizzle with balsamic shallots. Serve with the lemon aioli on the side for dipping.
