Prepare the Brisket
Season the brisket with salt and black pepper. In a large pot, heat olive oil over medium heat. Sear the brisket on all sides until browned. Add the beef broth and garlic cloves, cover, and simmer for about 3 hours, or until the brisket is tender.

Make the Gruyère Fondue
In a saucepan, combine the heavy cream and Gruyère cheese over low heat, stirring until the cheese is melted and smooth. Add salt and pepper to taste.

Assemble the Dip
Once the brisket is tender, shred it with two forks. Serve the shredded brisket with the Gruyère fondue, sliced ciabatta, and a side of au jus made from the cooking liquid. Serve the crispy frites on the side.
