Prepare the Fish

    Make the Batter

    In a bowl, combine the flour, baking powder, and salt. Gradually whisk in the cold sparkling water until the batter is smooth and thick enough to coat the back of a spoon.

    Heat the Oil

    In a deep pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Fish

    Dip the piece of fish into the batter, ensuring it is completely coated.

    Fry the Fish

    Carefully place the battered fish into the hot oil and fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Chips

    Cut the Potatoes

    Peel and cut the potatoes into thick strips (about 1/2 inch wide).

    Soak the Potatoes

    Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    Fry the Chips

    In a separate pot, heat the oil for frying. Drain and pat the potatoes dry before frying them in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, seasoning with salt to taste.
