    Preparation

    Remove the dry-aged ribeye from the refrigerator and let it rest at room temperature for at least 30 minutes before cooking.

    Seasoning

    Generously season the ribeye steak on both sides with kosher salt and black pepper.

    Searing

    Heat a cast-iron skillet over high heat and add olive oil. Once the oil is shimmering, carefully add the ribeye steak to the skillet.

    Cooking

    Sear the steak for about 4-5 minutes on one side until a crust forms. Flip the steak and add butter and rosemary to the skillet.

    Basting

    Baste the steak with the melted butter and cook for an additional 4-5 minutes for medium-rare, or until desired doneness.

    Resting

    Remove the ribeye from the skillet and let it rest for 10 minutes before slicing.

    Slice the ribeye against the grain and serve immediately.
