Preparation Instructions

  1. 1

    Prepare the Spinach Base

Rinse the fresh spinach leaves under cold water and pat them dry with a paper towel. Place the spinach in a large salad bowl.

  2. 2

    Prepare the Oranges

Peel the oranges and segment them, removing any seeds. Scatter the orange segments over the spinach.

  3. 3

    Add the Candied Pecans

Sprinkle the candied pecans on top of the spinach and oranges for added crunch and sweetness.

  4. 4

    Add the Goat Cheese

Crumble the Indiana goat cheese over the salad for a creamy texture.

  5. 5

    Top with Fried Onions

Add the crispy fried onions on top for extra flavor and crunch.

  6. 6

    Make the Vinaigrette

In a small bowl, whisk together 3 tablespoons of Dijon mustard, 4 tablespoons of apple cider vinegar, and 6 tablespoons of olive oil. Add cooked and crumbled bacon to taste.

  7. 7

    Dress the Salad

Drizzle the Dijon-bacon vinaigrette over the salad just before serving and toss gently to combine.
