Prepare the Spinach Base
Rinse the fresh spinach leaves under cold water and pat them dry with a paper towel. Place the spinach in a large salad bowl.

Prepare the Oranges
Peel the oranges and segment them, removing any seeds. Scatter the orange segments over the spinach.

Add the Goat Cheese
Crumble the Indiana goat cheese over the salad for a creamy texture.

Top with Fried Onions
Add the crispy fried onions on top for extra flavor and crunch.

Make the Vinaigrette
In a small bowl, whisk together 3 tablespoons of Dijon mustard, 4 tablespoons of apple cider vinegar, and 6 tablespoons of olive oil. Add cooked and crumbled bacon to taste.
