Preparing the Steak

    Season the Steak

    Pat the Prime Long Island New York Strip Steak dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Steak

    Heat olive oil in a skillet over medium-high heat. Add the steak and sear for 4-5 minutes on each side for medium-rare, or to your desired doneness.

    Rest the Steak

    Remove the steak from the skillet, cover loosely with aluminum foil, and let it rest for 5-10 minutes before slicing.

Making Candy Beet Au Gratin

    Prepare the Beets

    Preheat the oven to 375°F (190°C). In a greased baking dish, layer the sliced candy beets.

    Create the Cream Mixture

    In a bowl, combine heavy cream, minced garlic, thyme, salt, and pepper. Pour the mixture over the layered beets.

    Add Cheese

    Sprinkle Gruyere and Parmesan cheese evenly over the top.

    Cover with foil and bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until the top is golden and bubbly.

    In a bowl, mix grated horseradish, bread crumbs, melted butter, and chopped parsley until combined.
