    Prepare the Lamb

    Preheat the grill to medium-high heat. In a bowl, mix together olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the rack of lamb.

    Grill the Lamb

    Place the lamb on the grill bone-side down. Grill for about 15-20 minutes, turning occasionally, until the internal temperature reaches 135°F (medium-rare).

    Rest the Lamb

    Remove the lamb from the grill and let it rest for 10 minutes before slicing.

    Prepare the Mashed Potatoes

    While the lamb is resting, peel and chop the redskin potatoes. Boil in salted water until tender, about 15 minutes. Drain and return to pot.

    Mash the Potatoes

    Add butter, milk, salt, and pepper to the drained potatoes. Mash until smooth and creamy.

    Serve

    Slice the grilled rack of lamb and serve with a generous portion of redskin mashed potatoes on the side. Drizzle with chateaubriand sauce.
