    Remove the filet mignon from the refrigerator and let it come to room temperature for about 30 minutes. This helps in even cooking.

    Generously season both sides of the filet mignon with salt and black pepper.

    In a skillet, heat the olive oil over medium-high heat until shimmering.

    Sear the Steak

    Add the filet mignon to the pan and sear for about 4-5 minutes on one side, without moving it to develop a nice crust.

    Flip the steak over and add the butter and fresh herbs to the pan. Continue cooking for another 4-5 minutes for medium-rare doneness, basting the steak with the melted butter.

    Use a meat thermometer to check the internal temperature, aiming for 130°F (54°C) for medium-rare.
