    Prepare the Onions

    Slice the onion into thin rings. In a skillet, heat olive oil over medium heat and sauté the onions until they are caramelized, about 10-15 minutes. Season with salt and pepper to taste.

    Cook the Ground Ribeye

    In the same skillet, shape the ground ribeye into a patty and cook over medium-high heat for about 5-7 minutes on each side, or until it reaches your desired doneness. Top with Gorgonzola cheese during the last minute of cooking to allow it to melt.

    Make the Mushroom Duxelle

    Finely chop the mushrooms and garlic. In a separate pan, melt butter over medium heat. Add the chopped mushrooms, garlic, and thyme, and cook until the mushrooms release their moisture and become golden brown, about 5-7 minutes. Season with salt and pepper to taste.

    Prepare the Toast

    Toast the French bread slices in a toaster or under the broiler until golden brown. Spread the mushroom duxelle mixture on each slice.

    Place the cooked ribeye patty on a plate, top with caramelized onions and melted Gorgonzola, and serve with the mushroom duxelle toast on the side.
