Pork Chop Preparation

    Season the Pork Chops

    Season the Berkshire pork chops with salt and black pepper.

    Sear the Pork Chops

    In a skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until cooked to your desired doneness. Remove from skillet and set aside.

Bourbon Peppercorn Sauce Preparation

    Sauté Shallots

    In the same skillet, add butter and shallots. Sauté until shallots are translucent.

    Add Bourbon

    Carefully add bourbon to the skillet, scraping up any brown bits. Allow it to reduce by half.

    Finish the Sauce

    Stir in heavy cream and black peppercorns. Let it simmer until it thickens slightly. Adjust seasoning to taste.

Redskin Mashed Potatoes Preparation

    Cook the Potatoes

    In a large pot, boil quartered redskin potatoes until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, garlic, salt, and black pepper. Mash until smooth and creamy.

    Serve the seared pork chops topped with bourbon peppercorn sauce alongside a generous serving of redskin mashed potatoes.
