Method

Preparing the Steak

    Season the Steak

    Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and black pepper. Let them sit at room temperature for about 30 minutes before cooking.

    Grill the Steak

    Heat a grill or grill pan over medium-high heat. Add olive oil to the grill. Once hot, place the steaks on the grill and cook for about 4-5 minutes per side for medium-rare, or until desired doneness is achieved. Remove from heat and let rest for 5 minutes.

Making Garlic Butter

    Prepare the Garlic Butter

    In a small bowl, combine softened unsalted butter, minced garlic (press or finely chop), chopped fresh parsley, and lemon juice. Mix until well blended. Set aside.

    Apply Garlic Butter

    Once the steaks have rested, top each steak with a generous dollop of garlic butter and let it melt over the hot steak.

Cooking the Frites

    Prepare the Potatoes

    Peel and cut the russet potatoes into long, thin strips (about 1/4 inch thick). Place them in a bowl of cold water and let soak for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 325°F (160°C). Drain the potatoes and pat them dry with paper towels. Fry in batches for about 5-6 minutes until they are soft but not browned. Remove and drain on paper towels.

    Finish the Frites

    Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches until golden brown and crispy, about 3-4 minutes. Season with salt immediately after frying and serve hot.
