Ceviche Preparation

    Prepare the Shrimp

    In a large bowl, combine the peeled and deveined shrimp with lime juice. Ensure the shrimp are fully submerged in the lime juice to allow them to 'cook' in the acidity. Cover the bowl with plastic wrap and refrigerate for 30 minutes.

    Mix the Vegetables

    After 30 minutes, remove the shrimp from the fridge. The shrimp should be opaque. Add the chopped red onion, diced tomato, minced jalapeño, and chopped cilantro to the bowl. Season with salt and black pepper. Gently toss to combine all ingredients.

    Chill

    Cover the ceviche again and return it to the refrigerator for an additional 15 minutes to allow the flavors to meld.

Lime Aioli Preparation

    Combine Ingredients

    In a mixing bowl, combine mayonnaise, lime juice, minced garlic, salt, and black pepper. Whisk together until smooth and well combined.

    Cover the aioli and refrigerate for at least 15 minutes to let the flavors incorporate.

Serving

    Serve the Ceviche

    Spoon the chilled ceviche into serving bowls and drizzle with lime aioli on top. Garnish with additional cilantro if desired. Serve immediately with tortilla chips or on its own.
