Calamari

Lemon Jalapeno Aioli

Method

Calamari Preparation

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

  2. 2

    Mix the Coating

In a large bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well until evenly combined.

  3. 3

    Coat the Calamari

Dredge the dry calamari rings in the flour mixture until they are fully coated, shaking off any excess.

  4. 4

    Heat the Oil

In a deep skillet or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Calamari

Fry the calamari in batches for 2-3 minutes or until they are golden brown. Avoid overcrowding the pan.

  6. 6

    Drain and Serve

Remove the fried calamari from the oil and drain on a plate lined with paper towels. Keep warm until all calamari are cooked.

Lemon Jalapeno Aioli Preparation

  1. 7

    Mix the Aioli

In a small bowl, combine the mayonnaise, lemon juice, jalapeno, minced garlic, and salt. Stir until the mixture is smooth and well combined.

  2. 8

    Taste and Adjust

Taste the aioli and adjust the salt if necessary, adding more to taste.
