Preparing Fresh Oysters
Select and Clean Oysters
Choose fresh oysters that are tightly closed. Rinse them under cold water to remove any sand or debris.
Shuck the Oysters
Using an oyster knife, carefully shuck the oysters by inserting the knife into the hinge of the shell and twisting to pop it open. Be cautious of the sharp edges.
Serve
Place the shucked oysters on a bed of crushed ice on a serving platter. Garnish with lemon wedges and serve with Tabasco sauce and mignonette sauce.
Making Mignonette Sauce
Combine Ingredients
In a small bowl, combine the red wine vinegar, finely chopped shallots, and freshly ground black pepper.
Chill the Sauce
Refrigerate the mignonette sauce for at least 30 minutes to allow the flavors to meld before serving with oysters.
