Preparing the Garlic Confit

Make Garlic Confit
Preheat your oven to 250°F (120°C). In a small baking dish, combine the garlic cloves, olive oil, and thyme sprigs. Make sure the garlic is submerged in oil. Cover the dish with aluminum foil and bake for about 1 hour, or until the garlic is soft and golden. Allow to cool before using.

Cut and Roast the Potatoes
While the garlic confit is cooking, prepare the fries. Wash and peel the russet potatoes, then cut them into thin strips (about 1/4 inch thick). In a large bowl, toss the potato strips with olive oil, salt, and black pepper until evenly coated. Preheat a large baking sheet in the oven at 425°F (220°C) for 10 minutes. Spread the potatoes out in a single layer on the hot baking sheet and roast for 30-35 minutes, turning halfway through, until golden and crispy.
Finishing the Dish

Combine and Serve
Once the fries are done, remove them from the oven and immediately drizzle with truffle oil. Add a generous amount of the garlic confit (smashed) and toss to combine. Finely chop the fresh parsley and sprinkle over the fries. Finally, grate the parmesan cheese over the top and serve immediately while hot.
