Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat, around 375°F (190°C). If using a grill pan, heat it on the stovetop over medium-high heat.

  3. 3

    Grill the Salmon

Remove the salmon from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork.

Preparing the Seasonal Vegetables

  1. 4

    Prepare the Vegetables

Wash and trim the asparagus. Cut the bell peppers into strips and slice the zucchini into rounds.

  2. 5

    Season the Vegetables

In a large bowl, toss the prepared vegetables with olive oil, salt, and black pepper until evenly coated.

  3. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon. Grill for about 5-7 minutes, turning occasionally, until they are tender and have grill marks.
