Spicy Aioli
Method
Preparing the Calamari

Rinse and Soak
Rinse the calamari rings under cold water and then soak them in buttermilk for at least 30 minutes to tenderize.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well until fully combined.

Coat Calamari
Once soaked, remove the calamari from the buttermilk, allowing excess to drip off. Dredge each ring in the flour mixture, ensuring they are well coated.
Frying the Calamari

Heat Oil
In a deep frying pan or pot, heat oil over medium-high heat until it reaches 350°F (175°C).

Fry Calamari
Carefully add the coated calamari rings to the hot oil in small batches. Fry for about 2-3 minutes or until golden brown and crispy.

Drain and Serve
Remove the fried calamari with a slotted spoon and place them on paper towels to drain excess oil. Serve immediately.
Making Spicy Aioli

Combine Ingredients
In a small bowl, mix together mayonnaise, sriracha, lemon juice, minced garlic, and salt to taste.

Adjust Flavor
Taste the aioli and adjust the seasoning with more sriracha or salt as desired. Mix well.

Serve the spicy aioli alongside the crispy calamari for dipping.
