    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Trim the Brussels Sprouts

    Rinse the Brussels sprouts under cold water. Trim the ends and remove any yellow or damaged outer leaves.

    Cut Brussels Sprouts

    Cut the Brussels sprouts in half lengthwise.

    In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until evenly coated.

    Roast the Brussels Sprouts

    Spread the Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until they are crispy and golden brown, stirring halfway through.

    Add Balsamic Glaze and Cheese

    Once roasted, remove the Brussels sprouts from the oven and drizzle with balsamic glaze. Toss to combine and then sprinkle with pecorino cheese.
