Clam Steamer Directions

    Prepare the Clams

    Rinse the fresh clams under cold water to remove any sand or debris. Discard any clams that are open and do not close when tapped.

    Sauté the Aromatics

    In a large pot or Dutch oven, melt 2 tablespoons of butter over medium heat. Add the diced onion and fennel, and sauté for about 5 minutes until softened.

    Add Garlic and Wine

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant. Pour in the white wine and bring to a simmer.

    Steam the Clams

    Add the rinsed clams to the pot, cover with a lid, and cook for about 5-7 minutes, or until the clams have opened. Discard any clams that remain closed.

    Finish the Dish

    Stir in the remaining 2 tablespoons of butter, chopped parsley, salt, and black pepper to taste. Mix well to combine and remove from heat.

    Prepare the Baguette

    Slice the baguette in half lengthwise and spread the softened butter evenly over the cut sides.

    Toast the Baguette

    Place the baguette halves under a broiler on high for 2-3 minutes until the butter is melted and the bread is lightly golden. Watch closely to prevent burning.
