Crust Preparation

    Prepare the crust

    Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated.

    Form the crust

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for about 10 minutes, then remove and let cool while preparing the filling.

Filling Preparation

    Mix the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add in the granulated sugar, beating well after each addition.

    Add remaining ingredients

    Add the sour cream, vanilla extract, and eggs to the cream cheese mixture. Beat on low speed until just combined, ensuring not to overmix.

Baking and Cooling

    Bake the cheesecake

    Pour the filling over the cooled crust in the springform pan. Bake in the oven for 50-60 minutes, or until the center is set but slightly jiggly.

    Cool the cheesecake

    Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour. Then remove from the oven and refrigerate for at least 4 hours or overnight before serving.
