Calamari

Method

Preparing Calamari

    Clean Calamari

    Clean the calamari by removing the skin and innards. Rinse under cold water and pat dry.

    Slice Calamari

    Slice the calamari tubes into rings about 1/2 inch thick and set aside with the tentacles.

    Prepare Breading

    In a bowl, combine flour, cornstarch, salt, black pepper, and paprika. Mix well to create a breading mixture.

    Dredge Calamari

    Dredge the calamari rings and tentacles in the breading mixture, ensuring they are evenly coated.

Frying Calamari

    Heat Oil

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).

    Prepare Jalapenos

    Slice the jalapeno peppers into rings (remove seeds if desired for less heat).

    Fry Calamari and Jalapenos

    Carefully place the breaded calamari and jalapeno rings into the hot oil in batches. Fry until golden brown, about 2-3 minutes.

    Use a slotted spoon to remove the calamari and jalapenos from the oil and drain on paper towels.

Making Cocktail Sauce

    In a bowl, combine ketchup, horseradish, lemon juice, and Worcestershire sauce. Mix well.

Making Lemon Aioli

    In a mixing bowl, combine mayonnaise, minced garlic, lemon juice, salt, and black pepper. Stir until smooth.

Serving
