Preparation

  1. 1

    Cook the Rice

In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of rice, cover, and reduce heat to low. Cook for about 18-20 minutes until the rice is tender. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

  2. 2

    Prepare the Protein

If using chicken, beef, or pork, cook the protein in a skillet over medium heat until fully cooked. If using tofu, press and cube, then sauté in the skillet until golden brown. Season with salt, pepper, and any preferred spices.

  3. 3

    Prepare the Beans

In a small saucepan, heat the drained and rinsed black beans over medium heat until warmed through, about 5 minutes. Season with salt and pepper to taste.

Assembly

  1. 4

    Assemble the Burrito

Lay the large flour tortilla flat on a clean surface. In the center, layer 1 cup of cooked rice, 1 cup of black beans, 1 cup of shredded cheese, and 1 cup of your chosen protein. Add 2 tablespoons of sour cream, 2 tablespoons of salsa, and 2 tablespoons of chopped cilantro on top.

  2. 5

    Fold the Burrito

To fold the burrito, start by folding the sides of the tortilla over the filling. Then, starting from the bottom, roll the burrito tightly upwards until fully wrapped. Ensure the ends are tucked in to prevent spilling.

  3. 6

    Heat the Burrito (optional)

For a warm, crispy exterior, heat a skillet over medium heat. Place the burrito seam-side down and cook for about 2-3 minutes on each side until golden brown and heated through.
