Method

Preparation

  1. 1

    Prepare the Bread

Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices at an angle. Place the slices on a baking sheet.

  2. 2

    Toast the Bread

Brush both sides of each baguette slice with olive oil. Bake in the preheated oven for about 5-7 minutes, or until the bread is golden and crispy. Remove and set aside.

Topping Preparation

  1. 3

    Prepare the Tomatoes

Dice the tomatoes into small pieces. If desired, remove the seeds for a less watery topping.

  2. 4

    Chop the Basil

Stack the basil leaves, roll them tightly, and slice them thinly (chiffonade).

  3. 5

    Mix the Topping

In a bowl, combine the diced tomatoes, chopped basil, diced mozzarella cheese, minced garlic (finely chopped), balsamic vinegar, salt, and pepper. Toss gently to mix all ingredients.

Assembly

  1. 6

    Assemble the Bruschetta

Spoon the tomato mixture generously onto each toasted baguette slice. Drizzle with a little extra balsamic vinegar and olive oil if desired.

  2. 7

    Serve

Serve immediately while the bread is warm and crispy. Enjoy your bruschetta!
