Prepare the Fries
Preheat the oven to 425°F (220°C). Cut the russet potatoes into thin strips and soak them in cold water for at least 30 minutes. Drain and pat dry.

Bake the Fries
Spread the potato strips on a baking sheet, drizzle with olive oil, and season with salt and pepper. Bake for 30-35 minutes, flipping halfway through, until golden and crispy.

Add Truffle Oil and Cheese
Once the fries are done, remove them from the oven and drizzle with truffle oil. Immediately sprinkle with parmesan cheese, parsley, and chives. Toss to combine.

Make the Lemon Sage Aioli
In a bowl, combine mayonnaise, lemon juice, fresh sage, salt, and pepper. Mix well until smooth and creamy.

Serve the truffle fries hot with a side of lemon sage aioli for dipping.
