Make the Blueberry Sage Shrub
In a medium bowl, combine fresh blueberries, sage leaves, and granulated sugar. Gently muddle the mixture with a muddler or the back of a spoon to release the blueberry juices and infuse the sage flavor.

Add Vinegar
Pour in the apple cider vinegar and stir well. Cover the bowl with plastic wrap and let it sit in the refrigerator for 24 hours to allow the flavors to meld.

Strain the Shrub
After 24 hours, strain the mixture through a fine mesh sieve into a clean jar or bottle, pressing down on the solids to extract as much liquid as possible. Discard the solids and refrigerate the shrub until ready to use.
