Marinade and Chicken

Method

Preparation and Grilling

  1. 1

    Prepare the Marinade

In a bowl, whisk together the olive oil, chopped rosemary, chopped thyme, minced garlic, lemon juice, salt, and black pepper until well combined.

  2. 2

    Marinate the Chicken

Place the bone-in chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

  3. 3

    Preheat the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, prepare the coals until they are covered with white ash.

  4. 4

    Grill the Chicken

Remove the chicken from the marinade and allow excess marinade to drip off. Place the chicken breasts on the grill, skin side down. Grill for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the juices run clear.

  5. 5

    Serve

Remove the chicken from the grill and let it rest for 5 minutes before serving. You can serve it as is or with your choice of sauce on the side.
