Preparation

1. Preheat the Oven

Preheat your oven to 375°F (190°C) to ensure it’s hot enough for baking.

2. Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and cinnamon until well combined.

3. Mix Wet Ingredients

In another bowl, beat together the milk, eggs, and vanilla extract until smooth.

4. Combine Mixtures

Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix.

5. Add Flavorings

Fold in the fresh blueberries and lemon zest into the batter until evenly distributed.

Baking

6. Prepare the Baking Dish

Grease a 9x13 inch baking dish and pour the batter into it, spreading it evenly.

7. Bake

Place the baking dish in the preheated oven and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

8. Cool

Once baked, remove from the oven and allow to cool for about 10 minutes in the pan before transferring to a wire rack.

Serving

9. Dust with Powdered Sugar

Before serving, dust the top of the spoonbill with powdered sugar for a sweet finish.

10. Garnish

Garnish with fresh mint leaves for added flavor and presentation.

11. Slice and Serve

Slice into squares and serve warm or at room temperature.
