Prepare the Pork
Season the pork shoulder with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Sear the pork on all sides until golden brown.

Slow Cook the Pork
Transfer the seared pork to a slow cooker. Add BBQ sauce and cook on low for 8 hours or until the pork is tender and can be easily shredded.

Cook the Bacon
While the pork is cooking, fry the bacon in a skillet over medium heat until crispy. Drain on paper towels and set aside.

Assemble the Sandwich
Once the pork is cooked, shred it with two forks. On each bun, layer a generous amount of pulled pork, crispy bacon, and cheddar cheese.
