Coating the Fish
3. Dip each walleye fillet first into the flour mixture, then into the egg mixture, and finally back into the flour mixture to coat thoroughly.
Frying the Fish
4. Heat the oil in a deep fryer or large pot to 350°F (175°C).
5. Carefully add the coated fillets to the hot oil, frying in batches if necessary. Fry for about 4-5 minutes on each side, or until golden brown and cooked through.
Preparation for Steaming
6. If you prefer to steam the walleye, place the fillets in a steamer basket over boiling water and steam for about 8-10 minutes or until the fish flakes easily with a fork.
Serving
7. Serve hot with lemon wedges on the side.
