    Preparing the Prime Rib

    Preheat your oven to 250°F (120°C). Pat the prime rib roast dry with paper towels.

    Seasoning

    Rub the roast all over with olive oil. Combine salt, black pepper, garlic powder, and onion powder in a bowl and rub the mixture over the entire roast. Place rosemary and thyme sprigs on top.

    Cooking the Roast

    Place the seasoned roast on a rack in a roasting pan and insert a meat thermometer into the thickest part of the meat. Roast in the preheated oven until the internal temperature reaches 130°F (54°C) for medium-rare, about 2.5 to 3 hours.

    Resting

    Once the roast is cooked, remove it from the oven and cover it loosely with foil. Let it rest for at least 20-30 minutes before slicing.

    Making the Au Jus

    While the roast is resting, place the roasting pan on the stove over medium heat. Add the beef broth and scrape up any browned bits from the bottom of the pan. Simmer for about 10 minutes, then strain the liquid into a serving dish.

    Serving

    Slice the prime rib into 12 oz portions and serve with warm au jus on the side.
